Southern Pie
Blending two Southern pie ideas: Peach and Pecan
Ingredients:
- pie shell
- fresh/frozen/canned peaches (enough to fill the shell)
- pecan pie filling (sugar, corn syrup, eggs, butter, flour)
- pecan halves
* "Pecan" is pronounced "puh-con" -or- "pee-con" - to ask for a "pee-can" will get you something completely different and entirely regrettable.

- Portion the flour as follows: 1.5 c all purpose, 1 c whole wheat, 0.5 c white rice flour
- In the stead of the 2 t of cinnamon:
- 1T cinnamon, 1T ginger, 1T nutmeg, 1t anise seed powder, 1t clove powder
- Only egg whites
- Less 1 cup oil, add 6oz yoghurt
Pan-fried Beignet
All white bread dough, extra sugar and water.
- Portion the dough and let it raise - Shallow fry over medium low heat to allow thorough cooking. - Dust with cinnamon or powdered sugar.
