Stone Fruit and Ginger Galette

I like this gluten free crust made from ground nuts and oats.  It's hearty, rustic and fairly easy to make. In a food processor, mix the nuts (pecans, almonds and walnuts) with quick oats and a bit of salt and sugar.  Run the food processor until the mix is finely chopped and crumbly.  Then, add enough water to bring it together in a soft dough.  Since there's no gluten, it doesn't really need to rest.  Place between two sheets of parchment and roll out.

Prep the stone fruit.  I chose a mix of cherries, apricots, plums and peaches.  Add to a bowl with fresh grated ginger, sugar, vanilla, cornstarch and a pinch of salt. Place the fruit on the dough and distribute evenly, leaving a generous border.  Fold the dough inward to enclose the fruit.  Place the galette on a parchment lined baking sheet and bake at 350F for 30-45 minutes.

I like to serve it with accents of fresh fruit and Swedish pearl sugar.

 

Tarte Poire [Gluten free and Vegan Pear tarte]

I started with the walnut-oat pastry dough that I typically use for crackers and pie crust.  Roll, cut and place in a spring-form pan.  I pre-baked the crust at 375F for ~20 minuted.  In the mean time, I prepared the filling: equal parts water and cashews, nutritional yeast, salt, brown sugar and vanilla.  Then, peel and slice the pears.

Fill the pans with the custardy mixture and arrange the pears.  Resume baking for another 20 minutes.  Allow them to cool and brush with pastry glaze - strained apricot jam.  Complete the dish with raspberries and sliced almonds.

It's got a good taste, but it's really heavy.  I think it would take on a new, lighter dimension by replacing some water with a bit of raw pear in the custard.

Apricot and cranberry scones

IMG_5210 Mix chopped dried-apricots and dried cranberries.  Rehydrate with orange juice.  Add a grating of orange zest and a slash of vanilla essence.

Mix the flour and fat - here it's coconut oil with.  A little salt, sugar and baking powder and it's ready to have the soy milk added.

Form into a round flat (2cm thick) loaf.  Bake at 175C  (350F).

These are not the modern American scones, sugary, eggy and greasy.  These are more like the English mildly sweet biscuits.
